Wild Blueberry Ice Cream

Blueberries are one of my favorite fruits!  I love the flavor and versatility of the fruit.  We use blueberries for snacking, in smoothies, baked goods (like these Blueberry Banana Muffins) and in ice cream.

What Makes Wild Blueberries Different?

  • Wild blueberries are smaller than regular blueberries, but they are also more flavorful.
  • Wild Blueberries have two times the antioxidant capacity of the larger cultivated blueberries.  A growing body of research shows the potential health benefits of Wild Blueberries including gut health, diabetes, cancer, and brain health.
  • 99% of the Wild Blueberry crop is frozen fresh at harvest, which locks in their nutrition and taste.
  • Wild Blueberries are not planted— they have occurred naturally in barrens and fields in Maine and Eastern Canada

Wild Blueberry Ice Cream 

I think I could eat ice cream every night!  In fact, when I was growing up many nights we had ice cream for dessert.  So, when I was thinking about what to make using Wild Blueberries, ice cream was my natural choice.

This ice cream is easy to prepare!  I also reduced the calories and fat by using fat free half and half and skim milk instead of heavy cream and whole milk.  I have also had success substituting part of the sugar with Monk Fruit in the Raw.  The ice cream tastes just as good but I feel better about eating it.

Tip:  When making ice cream be sure to keep your cold ingredients in the fridge and your frozen ice cream insert in the freezer until you are ready to use.

When S tasted my Wild Blueberry Ice Cream, she said “I don’t like it; I love it!”

Blueberry Sauce
  1. ¼ cup sugar
  2. 1½ cups wild blueberries
  3. 1 Tablespoon lemon juice
Ice Cream
  1. ¾ cup sugar
  2. 2 cups fat free half and half
  3. 1 cup skim milk
  4. 1 Tablespoon vanilla
Blueberry Sauce
  1. In a small saucepan, combine sugar, blueberries and lemon juice.
  2. Bring to a boil.
  3. Reduce heat and simmer, uncovered, for 5 minutes or until slightly thickened, stirring occasionally.
  4. Cover and refrigerate until chilled.
Ice Cream
  1. In a large bowl, whisk the ice cream ingredients.
  2. Fill ice cream maker with mixture and run for 15 minutes.
  3. Add in chilled blueberry sauce.
  4. Once blueberry sauce is mixed in, serve or freeze for later.
