Shamrock Ice Cream Recipe

I don’t know about you but I used to love Shamrock Shakes from a certain fast food restaurant.  What I did not realize was that it was up to the franchise as to whether they purchase the mixture to the make the Shamrock Shakes.  My local stores quit purchasing the Shamrock Shake mixture several years ago, so I have had to solve my need for a Shamrock Shake by making my own Shamrock Ice Cream.

I like to make my homemade ice cream fat free by using skim milk and fat free half and half, however you could substitute any fat content milk and half and half.  If you wanted you could also add mini chocolate chips and have a mint chocolate chip ice cream.  Please note: be sure to use mint extract in the recipe and not peppermint extract – they are not the same!

A mint ice cream; copy cat Shamrock Shake.

Ingredients
  1. 1 cup skim milk
  2. 2 cups fat free half and half
  3. 3/4 cup sugar
  4. 1 Tablespoon vanilla extract
  5. 1/4 teaspoon mint extract (NOT peppermint)
  6. 8 drops of green food coloring
Instructions
  1. Combine all ingredients together.
  2. Pour into your ice cream maker.
  3. Follow instructions for your ice cream machine (mine takes 15-20 minutes).
Notes
  1. Keep all ingredients cold before combining.
  2. Ice cream will be soft right from the machine.
  3. Store leftovers in the freezer; they will be firmer than directly from the machine.
