During our trip to London, we had afternoon tea at Kensington Palace. It was a highlight from our trip and everyone thoroughly enjoyed the experience! We especially loved the scones with jam and clotted cream along with adding milk to our tea.

While we have been staying at home during this pandemic, I thought it would be extra special to pull out my grandmother’s teacups, bake scones, and have an afternoon tea with my daughter. It was so much fun and can’t wait to repeat the experience again soon!

British Inspired Scones

Scones were our favorite food item during our afternoon tea in London and I knew that I needed to create some for our afternoon tea. These scones are easy to make and absolutely delicious!

In a food processor, combine flour, sugar, baking powder, salt, and butter until the mixture resembles fine breadcrumbs. Add the milk slowly, mixing as you add, and only using enough of the milk to get your dough to come together.

Turn the dough out onto a flour-covered surface and sprinkle with additional flour. Then knead the dough three times to make the dough smooth. Press the dough into a circle that is about 1 inch thick. Using a well-floured cookie/biscuit cutter, cut the dough into 2-inch circles. Tip: Do not twist the cookie/biscuit cutter as you cut or it will cause your scones to rise unevenly.

Place the scones onto a greased and floured baking sheet. Then brush them gently with the beaten egg yolk and sprinkle with sugar. Bake the scones for 12-14 minutes, until golden brown.
Remove the baked scones from the oven and let them cool. Serve with strawberry jam and clotted cream or butter.
