Blueberry Skillet Cobbler

Blueberry Skillet Cobbler - the perfect summer time dessert | mybigfathappylife.com

Do you go blueberry picking?  We have a farm nearby that we enjoy visiting to pick blueberries and we also have a couple of our own bushes that we get quite a few blueberries off of.  Blueberries are one of my favorite fruits!  I’ve got a recipe for a classic dessert today: Blueberry Skillet Cobbler  

After we pick blueberries during the summer, I love to freeze so that we can enjoy them all year long.  It’s so easy to freeze blueberries, just wash and lay a single layer on a baking sheet and put the baking sheet into the freezer.  Why a single layer?  That way you do not end up with a pile of berries frozen together.  Once the berries are frozen you can place them into ziplock bags and then back into the freezer until it’s time to be used.

Blueberry Cobbler Skillet

The perfect summer dessert!

For Blueberry Filling
  1. 3 cups blueberries
  2. 1 cup sugar
  3. ¼ cup cornstarch
For Cobbler Topping
  1. 1/2 cup all-purpose flour
  2. 1/2 cup sugar
  3. ½ cup butter, cut into cubes
  4. ½ teaspoon salt
Instructions
  1. Place blueberries in saucepan on medium heat. Cover for 10 minutes, stirring often.
  2. Add in sugar and cornstarch. Turn heat down to low and simmer until mixture thickens. Remove from heat.
  3. Pour blueberry filling into a large cast iron skillet.
  4. Combine flour, sugar and salt. Cut in cubed butter until mixture is crumbly.
  5. Drop spoonfuls of mixture on top of blueberries.
  6. Line a baking sheet with aluminum foil incase the filling overflows. Place skillet on baking sheet.
  7. Bake at 400˚F for 20-25 minutes.
  8. Cobbler is done when the topping is golden brown.
  9. Optional: Top with your favorite vanilla ice cream.

    I was going to pick some fresh fruits today but it’s raining. It supposed to rain for like the next 3 weeks. I’ll have to pin this for later though, it looks yummy.
