How to Use Tomatoes from Your Garden + Summer Tomato Pasta Recipe

I love having a garden.  S helps me plant the garden in the spring and we check on the plants frequently for new flowers or fruit/vegetables.  She has a blast getting to pick the fruits and vegetables.  And of course, tries all the produce that she picks.    

One of my favorite plants to grow are tomatoes.  They are so easy to grow and gives you lots of fruit.  But what do you do when you have a whole bowl of tomatoes? 

I enjoy many tomatoes on salads.  I love to throw together a quick lunch with lettuce, carrots, tomatoes, grapes, craisins, and sometimes apples.  I have a new favorite light raspberry walnut dressing that is so good!

We love this Grilled Chicken Greek Salad it is perfect for dinner during the summer months.

However, my favorite recipe to use up tomatoes is Summer Tomato Pasta.  This is pasta dish is quick enough to make for lunch or hearty enough for dinner.  

As a bonus, all the produce is from my garden, which means it cannot get more organic than that!

Summer Tomato Pasta

A delicious way to use up vegetables from your garden.

Ingredients
  1. Individual Serving (multiple ingredients by number of those you are serving)
  2. 10 Cherry Tomatoes, cut in quarters
  3. 1 green onion or 1/4 small onion chopped
  4. 1 teaspoon minced garlic
  5. 1 cup of small pasta
  6. Optional vegetables: bell pepper, squash, or carrots
  7. Optional: parmesan cheese
Instructions
  1. Cook pasta while preparing tomato sauce.
  2. Add olive oil to pan and heat over low-medium heat.
  3. Add in garlic, vegetables and salt and pepper.
  4. Stir occasionally, as the vegetables cook down.
  5. Serve tomato mixture over pasta.

      I didn’t know deer liked tomotoes! I had a squirrel steal a couple this year and then he discarded them in the yard!

    That pasta looks amazing, but I want that Greek salad! I love growing my own produce in the summer, though I wish I had a larger space. I have to supplement with some things from the farmer’s market, but I still end up with plenty of yummy things to eat.

    I really wish I could have my own garden but I live in a apartment and the location of my apartment is in the shade so plants would hardly get any sunlight. Your salad looks great Paris, way better than the salad I’m eating now!

      Thank you Louida! I lived in a house for 7 years where the backyard was all shade and I missed having a garden so much. I was so happy when we moved into our new house and I had the room and perfect side yard for one.

    I have considered starting a small garden for the things we eat more often than others but with the heat here in TX and the water restrictions, I don’t know if it would produce anything.
