These Lemon Bars are full of bright lemon flavor with a sweet shortbread crust.

Are you a fan of lemon desserts? Then you will love these Lemon Bars! These bars are bursting with lemon flavor all on a sweet shortbread crust. It’s like sunshine in your mouth.

My husband really loved these lemon bars and I am pretty sure he ate almost the whole pan.

These Lemon Bars are full of bright lemon flavor with a sweet shortbread crust.

Lemon Bars

In a food processor, combine flour, sugar, and salt. Then pulse in the butter until dough forms. Press the crust into an 8x8in baking pan that has been sprayed with cooking spray. Bake at 350°F for 15-20 minutes. Remove from the oven and allow to cool.

These Lemon Bars are full of bright lemon flavor with a sweet shortbread crust.

In a mixing bowl, combine eggs, sugar, lemon juice, and lemon zest. Then add in flour, mixing until combined. Pour the lemon filling over the crust.

Bake at 350°F for 20-25 minutes, the center will be a little jiggly. Allow to cool and then refrigerate for a minimum of 2 hours. Before serving dust with powdered sugar.

Ingredients
  

Crust

  • 1/2 cup butter, salted
  • 1 cup flour
  • 1/4 cup sugar

Lemon Filling

  • 1/2 cup lemon juice (about 2-3 lemons)
  • 1 Tbsp lemon zest

  • 1 cup sugar
  • 1/2 cup flour
