Greek Salad

Course Side Dish

Ingredients
  

  • 1/4 small onion, diced
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 cup feta cheese, crumbled

Vinaigrette

  • 2 Tbsp rice vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 1 tsp Za'atar spice
  • 3 Tbsp olive oil

Instructions
 

  • To make this Greek Salad, start by making the vinaigrette. In a measuring cup combine rice vinegar, garlic, salt, pepper, sugar, and Za'atar seasoning. While whisking, slowly pour the olive oil into the mixture.
  • Combine in a bowl, diced onions, halved cherry tomatoes, chopped cucumbers, and feta cheese. Pour the vinaigrette over the salad and toss it gently.
  • Note: This salad is not one that does well when made ahead, so I recommend making it right before serving.
