Strawberry cake will be your new favorite summertime dessert!  It is strawberry season here and this cake is the perfect way to show off those fresh picked strawberries from your local farms!

Ingredients
  1. 1 stick salted butter, softened
  2. 1 1/4 cup granulated sugar, divided
  3. 2 large eggs
  4. 1 1/2 tsp vanilla extract
  5. 1 1/3 cup all-purpose flour
  6. 1 1/4 tsp baking powder
  7. 1/4 tsp salt
  8. 1/2 cup sour cream
  9. 16 ounces fresh strawberries, sliced
Instructions
  1. Preheat oven to 350˚F. Spray a 9-inch round cake pan with cooking spray.
  2. In the bowl of a stand mixer, combine the butter and 1 cup of sugar until fluffy.
  3. Beat in the eggs and vanilla.
  4. In a medium bowl, whisk together the flour, baking powder and salt. Gradually add the flour mixture to the butter mixture alternating with the sour cream. Beat until combined.
  5. Fold in the strawberries and spread the batter into the prepared pan.
  6. Sprinkle the top of the batter with the remaining 1/4 cup of sugar.
  7. Bake until a toothpick inserted in the center comes out clean, 35-40 minutes.
  8. Let the cake cool completely in the pan. Then slice and serve the cake.
