Shredded Chicken in the Crock-Pot

How to make quick healthy dinners: Shredded Chicken in the Crock-pot

After a long day, I want to be able to put together a quick healthy meal for my family.  My secret is shredded chicken– it is so versatile.  I use shredded chicken in everything from enchiladas to BBQ chicken sandwiches   

I buy a large package of fresh, boneless, skinless chicken breasts.  I especially love to get the packages when they go on sale.

In the crockpot, add 1 chopped onion and 2 teaspoons of minced garlic.  Then add your chicken breasts (4-5), followed by salt and pepper and fill the crockpot with water until it covers the chicken.  Cook on high for 4 hours.

When the chicken is fully cooked, carefully remove from the crockpot and using two forks shred the chicken.  Then measure out 1 and/or 2 cups of the shredded chicken and place in ziplock bags.  I find that I use 1 and 2 cups of chicken the most in recipes.  Place in your freezer.

The next time you have a recipe that calls for chicken just pull a package out the night before to thaw in the refrigerator.  Having the chicken already precooked allows me to assemble recipes quicker since I do not have to take that extra step.

    I absolutely love this! I always try to do shredded chicken in any recipe I can so that I can use the crock pot! Shredded chicken is so tender and moist too, I love it!
