We love Mexican food at our house!  I think my husband could eat Mexican every night and be perfectly happy.  For him, it’s all about the flavor!  

Mexican One Pot Pasta dish is easy enough for a quick weeknight meal while only dirtying one pot.  I love when clean up is a breeze, what about you?

This recipe is mild enough for my daughter to enjoy, while still providing my husband with enough flavor.  

My Mexican One Pot Pasta recipe uses shredded chicken.  I love to cook a bunch of chicken, shred it and then freeze 1.5 cups of chicken in a Ziploc bag.  This helps me put dinner on the table faster.

A flavorful, quick and easy Mexican Pasta that only dirties one pot.

Ingredients
  1. 1 tablespoon olive oil
  2. 2 teaspoons minced garlic
  3. 1/2 small onion, diced
  4. 1 1/2 cups of shredded chicken
  5. 1 T chili powder
  6. 1 T cumin
  7. 2 cups uncooked pasta (we use vegetable rotini)
  8. 2 cups salsa (we use Archer Farms Pineapple Mango Salsa)
  9. 1 1/2 cups chicken stock
  10. 1 (15-ounce) can tomato sauce
  11. 1 can of corn
  12. 1 can black beans, rinsed
Optional Toppings
  1. Shredded cheddar cheese
  2. Sour Cream
  3. Avocado, halved, seeded, peeled and diced
  4. Chopped fresh cilantro leaves
Instructions
  1. Heat olive oil in a saucepan over medium high heat. Saute onion and garlic.
  2. Stir in chicken stock, pasta, salsa, shredded chicken, chili powder, cumin and tomato sauce.
  3. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, refer to pasta package for the amount of time the pasta needs to cook.
  4. Add corn and black beans, and stir to combine.
  5. Top with cheese, sour cream, avocado and/or cilantro.
