Blueberry Cream Cheese Crepes

Eating crepes at home always reminds me of our trip to Paris. Strolling down the streets and stopping at stands or cafes for sweet or savory crepes. I love reminiscing about our travels and having crepes for brunch is a perfect way. 

The secret to a delicious crêpe is to make sure the batter is very thin in your pan when cooking.  We always pick up the pan and tilt it around in a circle to thin out the crêpe. It only takes a couple of minutes on each side to cook your crepe. They are sturdier than you think and fill flip easily without tearing; just run a spatula around the edge of the crepe before flipping.

Blueberry Cream Cheese Crepes

In a blender, combine flour, eggs, milk, sugar, vanilla, salt, and butter until smooth. Using a nonstick frying pan sprayed with cooking spray over medium heat, pour 1/4 cup of batter into the pan. Then tilt the pan in a circular motion to thin out the crepe. Cook 2 minutes until the bottom is light brown then flip and cook the other side. Serve with sweet cream cheese mixture and blueberry compote.

Blueberry Cream Cheese Crepes

Ingredients

  • 1 1/2 cups flour
  • 4 eggs
  • 2 cups milk
  • 2 Tablespoons sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 4 Tablespoons butter, melted
  • Sweet Cream Cheese Mixture:
  • 1/2 block cream cheese, room temperature
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 Tablespoon milk
  • Blueberry Compote:
  • 1 pint of blueberries
  • 1 Tablespoon lemon juice
  • 2 Tablespoons sugar

Instructions

  1. In a blender, combine flour, eggs, milk, sugar, vanilla, salt, and butter until smooth.

  5. Combine sweet cream cheese mixture ingredients together until smooth.
  6. Blueberry Compote:
  7. Combine blueberry compote ingredients in a saucepan over low heat. Stirring until the blueberries start to burst.
