I don’t know about you but I am always looking for easy-to-make dinners and with cooler weather upon us, it’s time to start adding soup recipes back into the dinner rotation! This creamy Tomato Basil Bisque recipe is so easy to make and a family favorite!

I always like to pair my Tomato Basil Bisque with grilled cheese because there is nothing better than dipping the grilled cheese in the bisque! However, you could also serve it with a thick slice of fresh bread and/or a salad.

This creamy Tomato Basil Bisque only requires a handful of ingredients including crushed tomatoes, carrots, fresh basil, onion, garlic, Organic Valley Milk, vegetable stock, and a couple of other pantry basics.

Tomato Basil Bisque

Heat olive oil in a large soup pot over medium-high heat. Add garlic and onion until the onion is translucent, stirring.

Add the crushed tomatoes, carrots, vegetable stock, basil, salt, and black pepper and stir until combined.

Reduce the heat to low, cover, and cook for 20-25 minutes, stirring occasionally.

Blend with an immersion blender (or you could use a regular blender) until smooth.

Add Organic Valley Milk and sugar and cook until warmed through. Serve warm.

Tomato Basil Bisque

Ingredients
  

  • 2 Tbsp olive oil
  • 1 small onion, diced
  • 4 cloves garlic, diced
  • 2 carrots, peeled and diced
  • 1 28oz can crushed tomatoes
  • 2 cups vegtable broth
  • 1/4 cup basil, sliced
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 cup Organic Valley milk
  • 1 tsp sugar

Instructions
 

  • Heat olive oil in a large soup pot over medium-high heat. Add garlic and onion until the onion is translucent, stirring.
  • Add the crushed tomatoes, carrots, vegetable stock, basil, salt, and black pepper and stir until combined.
  • Reduce the heat to low, cover, and cook for 20-25 minutes, stirring occasionally.
  • Blend with an immersion blender (or you could use a regular blender) until smooth.
  • Add Organic Valley Milk and sugar and cook until warmed through. Taste and add additional salt and pepper if needed. Serve warm.
